If pistols were not so weak/useless, would you only run around with a pistol? Which would you use? Why?

For myself, yes. I'd use the Glock 18 because it could be a good substitute as a sub-machine gun with that 30 round mag.

My char only has pistols and so far I didn't encounter any problems...

I just stopped using them all together, pretty useless at the moment. I have yet to see the 30 round, but if i do i will probably try it out again.

Because they're much weaker than they previously were, before the dayz devs changed the amount of damage rounds do to someone.

I only carry a pistol for RP purposes at the moment, as they seem to be completely useless against zombies right now. I wish it didn't take 2 to 3 headshots to kill an infected and suppressors actually worked so I could use them as a viable sidearm for infected.
